Banana Butterscotch Muffins

butterscotch muffin jpg I love the taste of butterscotch chips - slightly nutty and decadently sweet. They are a great company to bananas, chocolate and cinnamon in this easy and delicious muffin recipe. We are substituting some vegetable oil with apple sauce to make them a little lighter. It's a perfect recipe for a sweet breakfast or a nice snack on a rainy afternoon. Have your kids help you make them and they will love the taste even more!

Serves 12 muffins

Ingredients:

  • 3 bananas
  • 1 tsp cinnamon
  • 1 cup butterscotch chips
  • 1/2 cup chocolate chips
  • 1/4 cup apple sauce
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 2/3 cups flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda

Directions:

1. Mash the three bananas. Add cinnamon and stir well.

2. Line the muffin pan with paper liners and spray with baking spray.

3. Beat eggs, vegetable oil and apple sauce together.

4. In a separate bowl mix flour, sugar, baking soda and baking powder.

5. Slowly add the egg mixture to the dry ingredient bowl. Add mashed bananas with cinnamon in there too.

6. Gently fold in the butterscotch chips.

7. Place a scoop of the muffin mix into each muffin liner to the top.

8. Preheat the oven to 400 degrees.

9. Cover the top of each muffin with chocolate chips and a handful of butterscotch chips. Make cute designs, so this muffin can pass for a cupcake. Place the chips towards the center of each muffin so they don't fall off as it's baking.

10. Bake for 20 minutes.

11. Enjoy but don't forget to share!

My mom told me not to feed the baby from my spoon, since it causes cavities. Is this true? I've been sharing my food with her for a while now. She loves to eat anything I try. I am wondering if I should stop it.

Answer:

It is true. You can pass cavity-causing germs through contact - studies have shown this for over 30 years now. San Antonio dentist Dr. Lawrence Morris says a parent with active, open cavities can easily pass on the bacteria to her child. "Their enamel is a lot weaker, it's a lot thinner than permanent enamel. Cavities tend to develop a lot quicker than on permanent teeth".

It's also important to keep your own teeth clean (yes, both brushing and flossing), so you keep your own risk of cavities (and therefore passing any) to a minimum. At the same time, remember to brush your kids' teeth daily and avoid putting them to bed with a bottle or sippy cup. You can read more about Baby Teeth development here.
