BEEF & MUSHROOM CUTLETS recipe


beef cutletsThis recipe makes about 8 cutlets depending on the size. It's easy to make, full of protein and low on fat. You can use a food processor to mix the ingredients; however this usually results in onions and mushrooms being cut into powder, so mix by hand if you can. Make the cutlets with the beet salad below and you got yourself an easy dinner in less than an hour.

Serves 4

Ingredients:

  • 1 pound lean ground beef
  • 1 small onion
  • 5 medium mushrooms
  • 1 egg
  • 2-5 tbsp breadcrumbs (Italian style best)
  • Worcestershire sauce
  • Fresh dill
  • Olive oil

Directions:

1. Ground beef should be defrosted but cold - it will make forming cutlets easier in the end.

2. Chop the onion and mushrooms in small pieces.

3. Add the chopped onion and mushrooms to the ground beef along with 1 egg.

4. Mix well; season well with salt and pepper.

5. Chop a small bunch of fresh dill and add to the beef along with Worcestershire sauce. Mix well.

6. Add breadcrumbs to the mixture. Depending on the consistency, you may need more or less than 3 tbsp. Cutlet consistency should be right for making patties, which is the next step.

7. Heat some olive oil in a large pan.

8. Form small patties from the beef mix and place on the pan. You should be able to make about 8 patties. Cover the pan.

9. Turn the patties over once one side has browned. Each side takes about 3 minutes.

Serve with rice, potatoes or a vegetable side, such as the beet salad below.


Beet Salad Recipe

beet saladYou can't beat a 3-ingredient dish! Substitute mayo for light mayo if you want to reduce the fat.

Serves 4

Ingredients:

  • 2 large or 4 medium beets
  • 2 cloves garlic
  • 3-5 tbsp mayo

Directions:

1. Boil the beets similar to how you boil potatoes - in a pot of salted water for about 30 minutes until beets are soft (if a knife goes in easily). Cool them off for about 15 minutes.

2. Peal the skin from the beets

3. Grate the beets. Use your food processor or a simple grater will do - use the larger grate.

4. Chop or press the garlic.

5. Mix the grated beets, garlic and mayo. Season with salt.

It is true. You can pass cavity-causing germs through contact - studies have shown this for over 30 years now. San Antonio dentist Dr. Lawrence Morris says a parent with active, open cavities can easily pass on the bacteria to her child. "Their enamel is a lot weaker, it's a lot thinner than permanent enamel. Cavities tend to develop a lot quicker than on permanent teeth".

It's also important to keep your own teeth clean (yes, both brushing and flossing), so you keep your own risk of cavities (and therefore passing any) to a minimum.
